Comcast Out on Beach Drive
Dark Chocolate Amaretto Cake
This tasty tidbit was Chris King’s popular potluck dish at yesterday’s Seattle Night Out. Here is the much requested recipe:
-
1 (18.25 oz) package of devil’s food cake mix with pudding
-
1 (5.9 oz) package chocolate fudge instant pudding mix
-
1 1/4 cups water
-
1/2 cup vegtable oil
-
1 tablespoon almond extract
-
4 large eggs
-
3 cups semisweet chocolate morsels, divided
-
1/2 cup amaretto-flavored liquid non-dairy creamer
-
3 tablespoons sliced natural almonds, toasted
Combine first 6 ingredients in a large mixing bowl; beat at medium speed for 2 minutes. Stir in 2 cups chocolate morsels. Pour batter into a greased and floured 12-cup Bundt pan.
Bake at 350 degrees for 55-65 minutes until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack for 10 minutes; remove from pan, and cool completely on wire rack.
Combine remaining 1 cup chocolate morsels and amaretto-flavored creamer in a small saucepan. Cook over medium heat, stiring constantly, until morsels melt. Remove from heat; let stand 15 minutes. Drizzle chocolate glaze over cake; sprinkle with almonds.
According to Chris, this is a very easy recipe to make…I can tell you that it received rave reviews from all the neighbors!
Seattle Night Out — A Nice Time to See Neighbors
Beach Drive had a nice pot luck at our Night Out event and were visited by several of Seattle’s finest police officers.
Apparently the latest crime trends in our area are:
- portable navagation systems and laptops being stolen from cars.
- stolen landscaping (such as fountains)
- new construction sites are being targeted.
- break ins through back doors left open during the hot weather while someone is gardening in the front yard.
I know we really enjoyed seeing neighbors we thank Alyson for sharing her yard and making this event possible. Watch for recipes on future posts from the delish potluck dishes.
Were there other Seattle Night Out events in Beach Drive? Please let me know.

Don’t forget Seattle Night Out is TONIGHT!
I’m looking forward to seeing all our neighbors at tonights event. Do you have a SNO event planned in your block/area? It’s not too late to call your neighbors or go door to door and plan a quick get together–what a fun excuse to say hello and enjoy a beautiful sunny evening!

Pet of the Week: Thelma
Thelma is one of our three cats and once was recognized as "The Whitest Cat on the Internet". She has a myspace page (this is how she received the white cat honors) but doesn’t really check it out anymore as she is too busy lounging around the yard, sleeping on the couch and shedding. Thelma is the same white cat in the Beach Drive Blog banner.
Do you have a Beach Drive pet you’d like to feature on Pet of the Week? Please send me their photo.
Are you a Block Watch “Captain” or Organizing a Seattle Out Event on Beach Drive?
I’m having residents all over Beach Drive contact me regarding Seattle Night Out which takes place next Tuesday, August 5, 2008. If you are a Block Watch Coordinator/Captain or if you are having a Seattle Night Out gathering along Beach Drive, please let me know so that I can send people in the right direction–to the gathering closest to them.
“Night Out” is a national Crime Prevention event. It is designed to heighten crime prevention awareness, increase neighborhood support in anti-crime efforts, and unite our communities. It is a great chance to learn about crime prevention, while also celebrating your community and spending time with your neighbors.
